Sugar Flowers
Sugar flowers and cake Decorations, almost any variety of flower can be created.
Many varieties of flower can be realistically represented in sugar, so much so that it’s often very difficult to differentiate between the real thing and a sugar flower! Those with waxy petals e.g. lily, rose, orchid look especially realistic when copied in sugar.
Flowers and models are coloured with liquid sugar paints or dusted with coloured powders using a soft paint brush. Many modern powder colours are pearlised or have sparkle or glitter effects which are very effective and pretty. See the Floral Cake Gallery for examples.
When making sugar flowers the sugar paste varies from and is not as soft as that used in the coating/covering of a cake. Because flower paste has edible gum and/or egg white included in its ingredients the paste will dry and set quite hard and brittle, because of this sugar flowers and decorations will keep for a long time, usually years, if stored away from a damp atmosphere.
If you have your flowers or sugar models on display in a room, take care not to place them on a windowsill or anywhere that sun or direct light will shine on them, as this will fade the colours quite quickly.
To help preserve sugar flowers and models, some people place them in glass or acrylic dome. It is possible for them to be coated professionally to prevent any damp from getting at the sugar, it also makes them easier to clean as dust doesn't stick to the sugar.
Things made from sugar paste can be cleaned with a soft, damp paint brush.
It's not just floral wedding cakes that sugar flowers accompany, you can put them on any celebration cake you want including birthday cakes.
